I think I finally got the ramen noodle salad - you have to use the much-maligned flavor packets that come with the ramen in the dressing, and you have to use kind of a lot of sugar.


2 (3 ounce) packages chicken flavored ramen noodles, crushed (a rolling pin works well for this)
1 cup blanched slivered almonds
2 teaspoons sesame seeds
2 TBLS vegetable oil
1 bunch green onions, chopped

In a heavy skillet or cast iron frying pan, brown the noodles, almonds, and sesame seeds. The sesame seeds will start popping. When everything is toasty, mix in the chopped green onions, and remove from the heat.

1/2 cup white sugar
2 TBLS vegetable oil
2 TBLS dark Asian seame oil
1/3 cup cider vinegar
2 tablespoons soy sauce
flavor packets from the ramen

Whisk these together for the dressing.

1 head napa cabbage, sliced thin, in a big bowl - add the toasted noodle & nut mixture, and the dressing, and toss all together.

Good right away, but better the next day.
